Veg Pulao

Recipe:

InIngredients:

Ø Basmati Rice- 1 cup
Ø Water- 2 cup
Ø Chopped Onion- 1
Ø Green peas- ½ cup
Ø Potato- 1
Ø Chopped cabbage- ½ cup
Ø 2 tbsp Oil + 2 tbsp Ghee
Ø Green chili- 3-4
Ø Curry leaves- 5-6
Ø Ginger + Garlic paste- 2 tbsp
Ø Mustard Seeds- 1 tbsp
Ø Cumin seeds- 1 tbsp
Ø Hing powder- ½ tbsp
Ø Bay leaf-1
Ø Cloves- 2
Ø Salt as per taste
Ø Turmeric powder- ½ tbsp
Ø Red Chili powder- 1 tbsp
Ø Garam masala-2 tbsp
Fresh Coriander leaves and Dried Red chili for garnishing

Method:-

Ø In a bowl add Basmati rice, wash it and soak it for 5-10 min
Ø Heat pressure cooker with oil and ghee on medium flame.
Ø Now add mustard seeds, cumin seeds, hing, curry leaves,
 bay leaf and clove. Let it splutter
Ø Now add chopped onions and salt. Saute it for 2-3 min. Add green chili and ginger + garlic paste.
Ø Further add chopped cabbage, green peas and potato. Cook it for 5-7 min
Ø Add turmeric powder, red chili powder and garam masala. Saute for 4-5 min
Ø Now add strained rice and mix it for 5 min with soft hands. Now add water and cover the lid
Ø Take 1 whistle and switch off the flame
Ø After it comes to room temperature, open the lid and transfer it in a bowl
Ø Garnish Veg Pulao with fresh coriander leaves and Dried Red chili
 
Hot Veg Pulao are ready to serve with kadhi or raita
